Little Brinjals in oil

Ingredients:


Little Brinjals           -  250 gms
Tamarind                -  1 big lemon sized
Turmeric powder    -  1 tea spoon
Asafoitida               -  1 tea spoon
Cooking oil             -  4 table spoons
Mustard seeds        -  1 table spoon
curry leaves
Salt to taste

For masala(to be fried in oil and powdered)
Coriander seeds      -  1 table spoon
Bengal gram dal      -  1 table spoon
Black gram dal        -  1 table spoo
Red chillies              -  3 nos.
Methi seeds             -  1 tea spoon

1.  Clean the brinjals and remove slit them.
2.  Slit them in four parts leaving the bottom part.
3.  Now add salt enough for the brinjals to the masala powder.
4.  Stuff the brinjals with the powder.
5.  Heat oil in a thick bottomed kadai.
6.  Now place the stuffed brinjals in the kadai.
7.  Keep in low flame.
8.  Gently turn the brinjals from side to side.
9.  Once the brinjals cooked add the squeezed thick tamarind juice.
10.Add the asafoitida, turmeric powder, left over masala powder and salt.
11.Remember to add salt carefully, for you have already added it in the powder.
12.Let it boil for 5 mins.
13.Remove from stove and garnish with curry leave.
14.Little Brinjals in oil ready.
