Spring Onion Sambar

Ingredients:




Thoor dal              -  3 table spoons
Tamarind               -  1 small lemon sized
Sambar powder     -  1 table spoon
Spring onion           - 4 - 6 strings
Tomato                  -  1 large
Green chillies          -  2 nos
Ghee                      -  1 table spoon
Mustard seeds        -  1 tea spoon
Fenugreek              -  1 tea spoon
Salt to taste


1.  Soak tamarind in warm water and take a cup full of thick juice.
2.  Wash and cook thoor dal till soft.
3.  Wash and finely chop spring onions and tomatoes.
4.  Cut green chillies in 1/2 inch long pieces.
5.  Heat ghee in a kadai and mustard seeds and fenugreek seeds.
6.  Once mustard crackles add the spring onions and green chillies.
7.  Stir and cook till the onions are transparent and the green leaves of onions turn dark green.
8.  Add the chopped tomatoes and cook till the tomatoes turn soft and add the sambar powder.
9.  Keep stirring for 3 - 5 mins and then add the tamarind juice and salt.
10.Let the mixture boil for 4 - 5 mins or till the raw smell of tamarind goes of and then add the cooked dal and jaggery and allow it to boil for another 5 mins.  If necessary add a little water.
11.Remove from stove.  Spring onion sambar ready.  Serve with rice, idli, dosa or even paratha.
