Garlic Vathakuzhambu

Ingredients:


Garlic                      -  1 full(cleaned)
Tamarind                 -  1 lemon sized
Onion                      -  1 big sized
Tomato                   -  2 medium sized
Green chillies           -  2 nos
Red chillies              -  1 no
Fennugreek seeds    -  1 tea spoon
Mustard seeds         -  1 tea spoon
Red chili powder     -  1 tea spoon
Turmeric powder    -  1/2 tea spoon
Cooking oil or ghee -  2 table spoons
Salt to taste

1.  Soak tamarind in warm water for 1/2 hr. and then squeeze and remove juice.
2.  Finely chop garlic, onions, tomatoes and green chillies and keep separately.
3.  Heat oil or ghee in a kadai and add mustard seeds, chopped red chili and fenugreek seeds.
4.  Once the mustard crackles add the chopped onions and green chillies.
5.  Once onions turn transparent add the chopped garlics and after it gives out smell add the tomatoes.
6.  Now add the red chili powder, turmeric powder and salt along with the tarmarind juice.
7.  Let it boil for 5 mins and remove from stove and garnish with curry leaves.
8.  Garlic vathakuzhambu ready.
