Maangai Khuzhambu (Raw mango Sambar)

Ingredients:

Raw mangoes         -  1 medium sized
Green chilies           -  2 nos
Tamarind                -  a small lemon sized
Coriander seeds      -  1 table spoon
Groundnuts             -  1 table spoon
Red chilies              -  2 nos
Til (Gingelly)           -  1 table spoon
Cooking oil             -  2 table spoons
Mustard seeds         -  1 tea spoon
Turmeric powder     -  1/2 tea spoon
Asafoitida                -  1/2 tea spoon
Grated coconut       -  1 table spoon
Curry leaves            -  A few leaves
Jaggery (Gur)          -  1/2 tea spoon
Salt to taste

1.  Wash and cut mangoes into thin 1 inch long pieces.
2.  Slit green chilies into 2.
3.  Soak tamarind in warm water for 1/2 hr and extract 1 cup of juice from it.
4.  Heat 1/2 tea spoon of oil in a kadai and fry coriander seeds, red chilies, groundnuts and til till they turn brown, add grated coconuts and grind into a thick paste.
5.  Heat oil in a kadai, add mustard seeds and once it crackles add the chopped mangoes, curry leaves and green chilies.
6.  Stir fry till the mangoes turns slightly transparent then add the tamarind juice, salt, turmeric powder and asafoitida.
7.  Bring the mixture to boil and then add the ground masala.
8.  Cook till the whole mixture becomes thick kuzhambu.
9.  Tastes terrific with idli/ dosa or rice and ghee.
