Murungakkai Mandi (Drumstick Sambar)

Ingredients:

Murungakkai or
Drumstick Vegetable  -  2 nos
Brinjals                      -  5 - 7 nos
Green chilies              -  2 nos
Onions                       -  1 nos
Tomatoes                   -  2 nos
Curry leaves               -  a few leaves
Curry powder             -  2 table spoons
Ghee                           -  1 table spoon
Mustard seeds            -  1 tea spoon
Turmeric powder        -  1/2 tea spoon
Red chilies                  -  1 nos
Salt to taste

1.  Cut Murungakkais into 1 inch long pieces.  Also cut brinjals into thin, long pieces.
2.  Chop onions into thin pieces, tomatoes into small pieces and green chilies into long pieces.
3.  Heat ghee in a kadai, add the mustard seeds and once it crackles add the curry leaves, chopped onions.
4.  As soon as the onions turns transparent add the tomatoes and cook till they turn soft and shapeless.
5.  Add the cut drumsticks and brinjals.  Also add salt, turmeric powder and stir cook for 5 - 6 mins.
6.  In 5 mins the murungakkais will be half cooked.  Now add the curry powder, stir well and add 1 cup of water.
7.  Keep the stove in low flame and cook till the vegetables are done.
8.  Serve hot with rice and ghee.
